- 1/2 cup fresh cilantro leaves
- 1 cup lettuce leaves, separated

Instructions
- Cook Noodles: Prepare the rice noodles according to the package instructions, then drain and set them aside to cool slightly.
- Prepare Vegetables: Julienne the carrots, cucumber, and red bell pepper into thin matchstick-sized strips. Slice the avocado and separate the lettuce leaves. Wash the fresh mint and cilantro leaves thoroughly.
- Soften Rice Papers: Fill a large shallow bowl with warm water. Take one rice paper wrapper and submerge it in the warm water for 10-15 seconds until it becomes soft and pliable.
- Assemble Rolls: Lay the softened rice paper flat on a clean surface. In the center, place a small portion of cooked rice noodles, julienned vegetables, avocado slices, lettuce, and fresh herbs.
- Roll Them Up: Fold the sides of the rice paper wrapper over the filling, then roll tightly from the bottom up to encase all ingredients securely in a neat roll.
- Repeat: Repeat the softening and rolling process with the remaining rice paper wrappers and filling ingredients until all are assembled.
- Serve: Arrange the rolls on a serving platter and serve immediately with peanut sauce for dipping.
