Description

These Vegan Summer Rolls are a refreshing and light gluten-free appetizer perfect for warm weather. Packed with fresh vegetables, herbs, and tender rice noodles wrapped in delicate rice paper, they offer a healthy and flavorful dish that pairs wonderfully with a creamy peanut sauce for dipping. Ideal for a light lunch, party appetizer, or a tasty snack, these rolls are easy to prepare and naturally vegan and gluten-free.

Ingredients

Scale

Wrappers & Noodles

  • 10 rice paper wrappers
  • 1 cup rice noodles

Vegetables & Herbs

  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1 cup red bell pepper, julienned
  • 1 avocado, sliced
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1 cup lettuce leaves, separated

Dip

  • Peanut sauce, for dipping

Instructions

  1. Cook Noodles: Prepare the rice noodles according to the package instructions, then drain and set them aside to cool slightly.
  2. Prepare Vegetables: Julienne the carrots, cucumber, and red bell pepper into thin matchstick-sized strips. Slice the avocado and separate the lettuce leaves. Wash the fresh mint and cilantro leaves thoroughly.
  3. Soften Rice Papers: Fill a large shallow bowl with warm water. Take one rice paper wrapper and submerge it in the warm water for 10-15 seconds until it becomes soft and pliable.
  4. Assemble Rolls: Lay the softened rice paper flat on a clean surface. In the center, place a small portion of cooked rice noodles, julienned vegetables, avocado slices, lettuce, and fresh herbs.
  5. Roll Them Up: Fold the sides of the rice paper wrapper over the filling, then roll tightly from the bottom up to encase all ingredients securely in a neat roll.
  6. Repeat: Repeat the softening and rolling process with the remaining rice paper wrappers and filling ingredients until all are assembled.
  7. Serve: Arrange the rolls on a serving platter and serve immediately with peanut sauce for dipping.

Notes

  • Ensure the water for soaking the rice papers is warm but not hot to avoid tearing the wrappers.
  • You can customize the fillings according to your preference, adding other vegetables or tofu for extra protein.
  • Prepare the rolls just before serving to maintain the best texture and freshness.
  • Use gluten-free soy sauce or tamari in your peanut sauce to keep the dish gluten-free.
  • Store leftover peanut sauce separately in the refrigerator for up to a week.
