Description

A flavorful and creamy Thai Peanut Chicken recipe featuring tender chicken pieces simmered in a rich peanut sauce with coconut milk, soy sauce, and aromatic spices, served over rice or noodles for a deliciously satisfying meal.

Ingredients

Scale

Chicken and Marinade

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil

Peanut Sauce

  • 1/4 cup smooth peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1/2 cup coconut milk
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Garnishes

  • 1/4 cup chopped peanuts
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon sesame seeds (optional)

Serving

  • Cooked rice or noodles, for serving

Instructions

  1. Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until they are browned and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set it aside.
  2. Prepare the Peanut Sauce Base: In the same skillet, lower the heat to medium and add the peanut butter, soy sauce, rice vinegar, honey, lime juice, grated ginger, minced garlic, and chili flakes. Stir well to combine and cook for about 1-2 minutes until aromatic.
  3. Add Liquids and Simmer: Pour in the coconut milk and chicken broth, stirring constantly until the sauce is smooth and well blended. Bring the mixture to a gentle simmer.
  4. Combine Chicken and Sauce: Return the cooked chicken to the skillet, ensuring it is well-coated in the peanut sauce. Allow it to simmer in the sauce for another 5 minutes to meld the flavors.
  5. Season to Taste: Taste the sauce and add salt and pepper as needed. Adjust seasoning or add more chili flakes if a spicier flavor is desired.
  6. Garnish and Serve: Garnish with chopped peanuts, fresh cilantro, and sesame seeds if using. Serve the Thai Peanut Chicken over cooked rice or noodles.

Notes

  • You can adjust the amount of chili flakes to make the dish milder or spicier according to your preference.
  • Substitute chicken broth with vegetable broth to make it vegetarian-friendly if using tofu or vegetables instead of chicken.
  • Use smooth peanut butter for a creamy sauce or natural peanut butter for a more textured flavor.
  • Fresh lime juice is preferred for the best tangy flavor.
  • Serve immediately for the best taste and texture.
