For the Cornbread Batter
- 1 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups water
For the Filling
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup fresh or frozen corn kernels
- 1 cup diced bell peppers (variety of colors)
- 2 tsp cumin
- 2 tsp chili powder
- 1 cup shredded cheese (mix of cheddar and Monterey Jack), divided
Instructions
- Preheat and prepare dish: Preheat oven to 400°F (200°C) and grease a baking dish to prevent sticking and ensure even cooking.
- Make cornbread batter: In a bowl, whisk together cornmeal, baking powder, salt, and water until you have a smooth batter. Pour half of this batter into the greased baking dish to create the first layer.
- Prepare filling: In another bowl, combine the rinsed and drained black beans, corn kernels, diced bell peppers, cumin, chili powder, and half of the shredded cheese. Mix well to incorporate all the flavors evenly.
- Layer filling: Spread the bean and vegetable mixture evenly over the first layer of cornbread batter in the baking dish.
- Add top layer: Pour the remaining cornbread batter over the filling layer, spreading gently to cover. Sprinkle the leftover shredded cheese on top for a melty, cheesy finish.
- Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the pie is cooked through.
- Cool and serve: Remove from oven and allow the tamale pie to cool slightly before slicing. This helps the layers set and makes serving easier.
