Instructions

  1. Make the crust: Crush the vanilla wafers into fine crumbs and mix thoroughly with melted butter until well combined. Press this mixture evenly into the bottom of a 9×13-inch baking dish to form a firm crust layer.
  2. Prepare the cheesecake layer: Using a mixer, beat the softened cream cheese until smooth and fluffy. Gradually add powdered sugar and beat until combined. Mix in the sour cream until smooth, then gently fold in the whipped topping to maintain the light texture. Spread this creamy mixture evenly over the prepared crust.
  3. Create the strawberry layer: Dissolve the strawberry gelatin powder completely in boiling water. Add the ice cubes to cool the gelatin quickly. Once cooled but not set, stir in the heavy cream and whipped topping until well blended. Fold in the sliced fresh strawberries carefully. Spread this strawberry mixture evenly over the cheesecake layer.
