Description

  • 4 Boneless, Skinless Chicken Breasts
  • 8 slices Bacon
  • 2 tbsp Olive Oil

Stuffing

  • 8 oz Cream Cheese, softened
  • 1 cup Shredded Cheddar Cheese
  • 2-3 Jalapeños, diced
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Black Pepper, to taste

Topping

  • 1 cup Breadcrumbs (plain or seasoned)


Instructions

  1. Prepping the Chicken: Place your chicken breasts between two sheets of plastic wrap, then use a meat mallet to gently pound them to an even thickness of about ½ inch to ensure uniform cooking.
  2. Making the Stuffing: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  3. Wrapping the Chicken: Spread a generous layer of the cheese mixture over each flattened chicken breast. Roll each chicken breast tightly from one end to the other, then wrap each roll with two slices of bacon. Secure the rolls using toothpicks to hold the bacon in place.
  4. Prepare for Baking: Preheat your oven to 375°F (190°C). Place the bacon-wrapped chicken rolls into a baking dish. Drizzle olive oil over the rolls and sprinkle breadcrumbs on top to add a crispy finish.
