Description

These Red Lentil Patties are a delicious and nutritious vegetarian option, featuring tender red lentils combined with aromatic spices, fresh parsley, and crunchy breadcrumbs. Pan-fried to golden perfection, they make a perfect appetizer or light meal that’s both flavorful and satisfying.

Ingredients

Scale

Main Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • Oil for frying

Instructions

  1. Rinse Lentils: Thoroughly rinse 1 cup of red lentils under cold running water to remove any impurities or dirt.
  2. Cook Lentils: In a pot, combine the rinsed lentils with 2 cups of water. Bring to a boil, then reduce heat and simmer until the lentils become soft, about 15-20 minutes.
  3. Drain and Cool: Drain any excess water from the cooked lentils and allow them to cool to room temperature, making them easier to handle.
  4. Sauté Aromatics: Heat a pan and sauté the finely chopped onion and minced garlic until soft and fragrant, about 4-5 minutes.
  5. Mix Ingredients: In a large bowl, combine the cooled lentils, sautéed onion and garlic, grated carrot, cumin powder, coriander powder, salt, black pepper, chopped parsley, and breadcrumbs. Mix well until the mixture holds together.
  6. Form Patties: Shape the mixture into evenly sized patties, about 2-3 inches in diameter.
  7. Fry Patties: Heat oil in a pan over medium heat and fry the patties until they are golden brown and crispy on both sides, approximately 3-4 minutes per side.
  8. Drain Excess Oil: Remove patties from the pan and place them on paper towels to drain any excess oil before serving.

Notes

  • Use fresh breadcrumbs for better texture or substitute with panko for extra crispiness.
  • To make the patties vegan, ensure breadcrumbs do not contain dairy or eggs.
  • These patties can be baked at 400°F (200°C) for 20 minutes as a healthier alternative to frying.
  • Serve with a yogurt or tahini dip to enhance flavor.
  • Leftover patties can be refrigerated for up to 3 days or frozen for up to 1 month.
