Ingredients
Scale
Meat and Vegetables
- 1 pound top sirloin, thinly sliced
- ½ yellow onion, chopped
- 3 bell peppers, cut into strips
Liquids and Seasoning
- 2 tablespoons olive oil
- 2 cups chicken broth
- 8 ounces tomato sauce
- 1 packet fajita seasoning
Grains and Cheese
- 2 cups Minute Rice
- Velveeta cheese dip or any melty cheese dip, as much as desired
Instructions
- Sauté Vegetables and Steak: Heat olive oil in a skillet over medium-high heat. Add the chopped onion and bell pepper strips. Cook for a few minutes until the vegetables begin to soften, stirring occasionally to prevent sticking.
- Add Steak and Seasoning: Add the thinly sliced top sirloin to the skillet. Sprinkle the fajita seasoning over the ingredients and stir well. Continue cooking, stirring frequently, until the steak is cooked to your desired level of doneness and the vegetables are tender.
- Incorporate Rice and Liquids: Pour in the Minute Rice, tomato sauce, and chicken broth. Stir thoroughly to combine all ingredients. Reduce heat to medium and let the mixture simmer. Follow the cooking time on the rice package, or until the rice is cooked through and the liquid is mostly absorbed. If the skillet becomes too dry, add a splash of water or broth to maintain moisture.
- Finish with Cheese Dip: Once the rice is fluffy and the skillet is no longer watery, spoon the Velveeta cheese dip evenly over the top. Allow the cheese to melt completely into the skillet, creating a creamy layer throughout the dish.
- Plate and Serve: Immediately scoop portions onto plates while hot. Enjoy the skillet fresh for the best flavor and texture experience.
Notes
- You can substitute the sirloin with other cuts of steak or even chicken strips if preferred.
- Feel free to adjust the amount of cheese dip to your taste; other melty cheeses like Monterey Jack or Pepper Jack work well too.
- If you do not have Minute Rice, use any quick-cooking rice, but adjust liquid amounts and cooking time accordingly.
- For a gluten-free version, verify that your fajita seasoning and broth are gluten-free certified.
- Adding fresh lime juice and chopped cilantro as a garnish brightens the dish perfectly.
