Ingredients
Scale
Liquids
- 2 oz white rum
- 1 oz coconut cream (or coconut milk for a lighter version)
- 1 oz fresh lime juice
- 1 oz pineapple juice
- Soda water (club soda or sparkling water)
Other Ingredients
- 1-2 teaspoons sugar (or simple syrup to taste)
- 6-8 fresh mint leaves
- Ice cubes
Garnish
- Pineapple slices
- Fresh mint sprigs
Instructions
- Muddle the Mint: In a cocktail shaker or a sturdy glass, add the fresh mint leaves and sugar (or simple syrup). Gently muddle the mint with a muddler or the back of a spoon to release the mint oils and flavor.
- Add the Liquids: To the shaker, add the white rum, coconut cream (or coconut milk), fresh lime juice, and pineapple juice. Add ice cubes to fill the shaker halfway.
- Shake It Up: Put the lid on the shaker and shake vigorously for about 15-20 seconds to mix all the ingredients together and chill the drink.
- Strain and Serve: Strain the mixture into a glass filled with ice cubes. Top off the drink with soda water (about 2-3 oz, depending on your preferred fizz level).
- Garnish and Serve: Garnish with a sprig of fresh mint, a slice of pineapple, or a small pineapple wedge on the rim of the glass.
- Enjoy: Stir the drink gently before sipping to fully combine the flavors. Enjoy your refreshing, tropical Pineapple Coconut Mojito!
Notes
- If you like your drink a bit sweeter, add more sugar or simple syrup to taste.
- For a fun twist, you can freeze pineapple or coconut water cubes to use as ice, adding extra flavor to the drink as they melt.
- You can make this into a mocktail by omitting the rum and using extra pineapple juice or coconut water for a non-alcoholic version.
