Ingredients
Scale
Chicken and Seasonings
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Butter and Broth
- 2 tablespoons unsalted butter
- 3 cups low-sodium chicken broth
Pasta and Finishing Touches
- 8 ounces egg noodles (or other short pasta)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped parsley (optional)
- Extra butter and cheese for serving (optional)
Instructions
- Heat and Season Chicken: Heat the olive oil in a large skillet or sauté pan over medium heat. Add the bite-sized chicken pieces and season them evenly with garlic powder, onion powder, salt, and black pepper. Sauté for 5 to 6 minutes, stirring occasionally, until the chicken is browned on the outside and mostly cooked through.
- Add Butter and Broth: Add the unsalted butter to the skillet and stir until melted and combined with the chicken. Pour in the low-sodium chicken broth and bring the mixture to a rolling boil.
- Cook Noodles: Add the egg noodles to the pan and stir to distribute the pasta evenly through the broth. Reduce the heat to medium-low, cover the skillet with a lid, and let the noodles simmer for 8 to 10 minutes. Stir occasionally to prevent sticking and cook until the noodles are tender and most of the liquid has been absorbed.
- Finish with Parmesan: Remove the lid and stir in the grated Parmesan cheese. Continue to simmer uncovered for an additional 1 to 2 minutes, allowing the cheese to melt fully and create a creamy coating over the noodles and chicken. Taste and adjust seasoning as necessary.
- Garnish and Serve: Sprinkle the chopped parsley over the top for freshness and color. Serve the dish warm, with extra Parmesan cheese or a pat of butter on top if desired for added richness.
Notes
- Substitute egg noodles with any quick-cooking pasta such as rotini or penne if preferred.
- For a vegetable boost, add frozen peas, fresh spinach, or sautéed mushrooms during the noodle cooking phase.
- To make the dish extra rich and creamy, stir in a splash of heavy cream after adding the Parmesan cheese.
- Use low-sodium broth to control salt levels and adjust seasoning at the end to taste.
