Description

Delicious and easy no-bake cookies made with a rich chocolatey mixture, creamy peanut butter, and quick oats. Perfect for a quick treat without the need for an oven, these cookies are simple to prepare and set quickly for a satisfying snack.

Ingredients

Scale

Dry Ingredients

  • 2 cups granulated sugar
  • 1/4 cup cocoa powder
  • 3 cups quick oats (instant oats)

Wet Ingredients

  • 1/2 cup butter
  • 1/2 cup milk
  • 1 tablespoon vanilla extract
  • 3/4 cup creamy peanut butter

Instructions

  1. Prepare Parchment Paper: Lay out 2 or 3 sheets of parchment paper on your counter to place the cookies on once they are ready to set.
  2. Combine Ingredients and Boil: In a medium pot, combine the granulated sugar, cocoa powder, butter, milk, and vanilla extract. Bring the mixture to a rolling boil and cook for exactly 1 minute to properly dissolve the sugar and develop the flavor.
  3. Add Peanut Butter and Oats: Remove the pot from heat and stir in the creamy peanut butter until the mixture is smooth and uniform. Then fold in the quick oats thoroughly to prepare the cookie batter.
  4. Form Cookies and Cool: Working quickly, drop spoonfuls of the batter onto the prepared parchment paper. Spread them out evenly to prevent sticking. Allow the cookies to cool and set for 10 to 15 minutes until firm enough to handle.

Notes

  • Use quick or instant oats for best texture; old-fashioned oats may result in a denser cookie.
  • Work quickly after mixing to prevent the batter from hardening before portioning.
  • Store cookies in an airtight container at room temperature for up to a week.
  • For a dairy-free version, substitute butter and milk with plant-based alternatives.
