Ingredients
Scale
Ingredients
- 1/2 cup plain Greek yogurt (or low-fat sour cream)
- 1/4 cup fresh tomatillos, husked and roughly chopped
- 1/4 cup cilantro, packed
- 1 tablespoon lime juice
- 1 teaspoon apple cider vinegar
- 1 small garlic clove, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2-3 tablespoons water (to thin as needed)
Instructions
- Prepare the Tomatillos: Remove the husks from the tomatillos and rinse them well. Chop them into chunks.
- Blend the Ingredients: In a blender or food processor, combine the Greek yogurt, tomatillos, cilantro, lime juice, apple cider vinegar, garlic, cumin, salt, and pepper. Blend until smooth and creamy.
- Adjust Consistency: If the dressing is too thick, gradually add 1-2 tablespoons of water until you reach the desired consistency. Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
- Chill and Serve: For best flavor, refrigerate the dressing for at least 30 minutes to let the flavors meld. Serve it over salads, tacos, grilled chicken, or as a dip for veggies.
Notes
- If you prefer a dairy-free version, swap the Greek yogurt for a non-dairy yogurt (like coconut or cashew yogurt).
- For a spicier kick, add a chopped jalapeño or a pinch of chili powder to the mix.
- This dressing keeps in the fridge for up to 4-5 days in an airtight container.
