  • Salt and black pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin thoroughly with butter or non-stick spray to prevent sticking and ensure easy removal of the bites after baking.
  2. Mix Ingredients: In a large mixing bowl, combine the cold mashed potatoes, eggs, shredded cheddar cheese, grated parmesan cheese, and chopped chives. Season the mixture with salt and black pepper to your preference. Stir well until all ingredients are evenly incorporated.
  3. Fill the Pan: Using a spoon or small scoop, fill each muffin cup with the potato mixture, pressing lightly on top to compact the filling and fill the cups to the brim for nicely shaped bites.
