Ingredients
Scale
Chicken and Coating
- 4 boneless, skinless chicken breasts or thighs
- 1 cup crushed cornflakes or panko breadcrumbs
- 1 tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp olive oil or butter
Toppings and Sauce
- ½ cup feta cheese (crumbled or sliced)
- ½ cup honey
- 1 tsp red pepper flakes
- 1 tsp apple cider vinegar (optional)
Instructions
- Preheat the oven or air fryer: Set your oven to 400°F (200°C) or your air fryer to 375°F to prepare for cooking the chicken.
- Season the chicken: Sprinkle salt, pepper, and smoked paprika evenly over the chicken breasts or thighs to ensure a flavorful base.
- Coat the chicken: Brush each piece of seasoned chicken with olive oil or melted butter, then press into the crushed cornflakes or panko breadcrumbs until well coated to create a crispy crust.
- Cook the chicken: Place the coated chicken in the oven and bake for 18–22 minutes, or air fry for 12–15 minutes, until cooked through and golden brown.
- Add feta and finish cooking: Remove the chicken from heat and top each piece with crumbled or sliced feta cheese, then return to the oven or air fryer for an additional 3–5 minutes to soften the cheese.
- Make and drizzle hot honey: While the chicken finishes cooking, mix honey with red pepper flakes and optional apple cider vinegar for a spicy-sweet glaze, then drizzle it generously over the cooked chicken before serving.
Notes
- Using chicken thighs will yield a juicier result compared to breasts.
- For a milder flavor, reduce the amount of red pepper flakes in the hot honey.
- Apple cider vinegar adds a subtle tang and balances the sweetness but can be omitted if preferred.
- Serve with a side salad or roasted vegetables for a complete meal.
- Leftover hot honey can be stored in the refrigerator for up to one week.
