Description

This Delicious Ground Turkey Sweet Potato Bowl is a nutritious and flavorful meal combining roasted sweet potatoes with spiced ground turkey, fresh veggies, creamy guacamole, and tangy cheese. Perfect for a quick, wholesome dinner, it balances protein, healthy fats, and vibrant vegetables in one satisfying bowl.

Ingredients

Scale

Sweet Potatoes

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • Salt & black pepper to taste

Ground Turkey Mixture

  • 1 pound ground turkey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt & black pepper to taste

Toppings

  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled feta or cotija cheese
  • 1/2 cup guacamole
  • 1/2 cup shredded lettuce
  • 1 lime, cut into wedges

Instructions

  1. Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and slice the sweet potatoes into rounds or cubes. Toss them with olive oil, salt, and pepper, then spread evenly on a baking sheet. Roast in the oven for 25-30 minutes until they are golden brown and tender, turning halfway through for even cooking.
  2. Cook Ground Turkey: While the sweet potatoes roast, heat a nonstick skillet over medium heat. Add the ground turkey and cook, breaking it apart, until browned and no longer pink, about 6-7 minutes.
  3. Season Turkey: Stir in smoked paprika, cumin, chili powder, salt, and pepper into the browned turkey. Cook for another 2 minutes to allow the spices to become fragrant and meld with the meat.
  4. Prepare Toppings: Dice the tomatoes, chop the fresh cilantro, crumble the feta or cotija cheese, shred the lettuce, and have guacamole and lime wedges ready to assemble the bowl.
  5. Assemble Bowl: In serving bowls, layer the roasted sweet potatoes as the base. Top with the seasoned ground turkey, then add shredded lettuce, diced tomatoes, guacamole, crumbled cheese, and chopped cilantro. Finish each bowl with a squeeze of fresh lime juice for brightness.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • For extra heat, add a pinch of cayenne pepper or hot sauce to the turkey while cooking.
  • Sweet potatoes can be roasted a day ahead to save time; reheat before assembling.
  • Use dairy-free cheese or omit cheese entirely to make this recipe dairy-free.
  • Serve with warm corn or flour tortillas on the side for a more filling meal.
