Ingredients
Scale
Main Dish
- 1 pound ground beef (or ground turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small head of cabbage, chopped
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 cup corn (frozen or canned, drained)
- 1 packet taco seasoning (or homemade seasoning)
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
Toppings
- 2 cups Fritos corn chips
- Sour cream (optional, for serving)
- Chopped green onions (optional, for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
- Cook the Ground Beef: In a large skillet or pot, heat over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess fat to keep the dish from becoming greasy.
- Add Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes until the onion is translucent and fragrant, building a flavorful base.
- Add Cabbage and Seasonings: Stir in the chopped cabbage, diced tomatoes with their juices, corn, and taco seasoning packet. Mix everything well to combine. Season with salt and pepper to taste. Cover the skillet and cook for 10-15 minutes, stirring occasionally, until the cabbage is tender and the flavors meld.
- Add Cheese: Once the cabbage is tender, sprinkle the shredded cheese evenly over the top. Cover the skillet again and let it cook for 2-3 more minutes until the cheese is melted and gooey.
- Serve: Remove the skillet from heat and let the dish sit for a few minutes before serving. Spoon servings onto plates and top each with 2 cups of crunchy Fritos corn chips for added texture. Add a dollop of sour cream if desired, and garnish with chopped green onions and fresh cilantro for extra flavor and freshness.
Notes
- You can substitute ground turkey for beef for a leaner option.
- Adjust taco seasoning quantity to taste, or use a homemade blend for a personalized spice level.
- Use fresh corn instead of frozen or canned if available for added sweetness.
- For a vegetarian version, omit ground meat and increase cabbage and corn quantities or add beans.
- Leftovers can be stored in an airtight container in the refrigerator up to 3 days and reheated on the stovetop or microwave.
