- Preheat oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking.
- Separate eggs: Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in a separate bowl.
- Mix egg yolks and cheese: Add the cottage cheese or cream cheese to the egg yolks and mix until smooth. If using, add the artificial sweetener and mix well to combine.
- Beat egg whites: Add the cream of tartar to the egg whites and beat with an electric mixer on high speed until stiff peaks form; this provides the light, fluffy texture.
- Fold whites into yolks: Gently fold the beaten egg whites into the yolk and cheese mixture in three additions, being careful not to deflate the whites to maintain the airy texture.
- Spoon onto baking sheet: Spoon the mixture onto the prepared baking sheet in 6-8 equal mounds, shaping them into rounds with the back of a spoon.
- Bake: Bake in the preheated oven for 25-30 minutes or until the cloud bread is golden and set.
- Cool before serving: Remove from the oven and allow the cloud bread to cool on the baking sheet for a few minutes before transferring to a cooling rack. Serve warm or at room temperature.
