Ingredients
Scale
Ganache
- 340 g high-quality white chocolate chips
- 30 ml heavy whipping cream (35% fat content)
- 30 ml blue curaçao liqueur
- 2.5 ml pure vanilla extract
Coating
- 80 g blue sanding sugar
- Alternative coatings: powdered sugar, shredded coconut, or cocoa powder, as desired
Instructions
- Melting Chocolate: Combine white chocolate chips and heavy whipping cream in a microwave-safe bowl. Heat in 30-second intervals at 50% power, stirring thoroughly after each interval until the mixture is fully smooth and glossy.
- Adding Flavor: Add blue curaçao liqueur and vanilla extract to the melted mixture. Gently stir until evenly combined and the ganache turns a pale blue hue. Cover tightly with plastic wrap and refrigerate for 2 hours, until set and scoopable.
- Preparing for Shaping: Line a baking sheet with parchment paper. Place sanding sugar in a shallow bowl. Remove chilled ganache from the refrigerator; ensure it is firm and ready to be shaped.
- Shaping Truffles: Scoop portions of ganache, using a teaspoon or small cookie scoop, into heaping teaspoon-sized amounts. Quickly roll each portion between your palms to form smooth balls, working efficiently to prevent softening.
- Coating Truffles: Immediately roll each truffle in blue sanding sugar, ensuring an even, sparkly coating. Alternative coatings may be used as preferred.
- Setting Truffles: Arrange coated truffles on the parchment-lined baking sheet. Refrigerate for 1 hour to allow them to fully set and maintain their shape.
Notes
- Use high-quality white chocolate for the best flavor and smooth texture.
- Work quickly when rolling the truffles to prevent the ganache from softening and becoming difficult to handle.
- Blue curaçao liqueur adds a subtle orange flavor and color but can be omitted or substituted with another flavored liqueur if desired.
- Alternative coatings like powdered sugar, shredded coconut, or cocoa powder provide different textures and tastes.
- Store truffles in an airtight container in the refrigerator for up to one week.
