  • 2 cloves Garlic, minced
  • 1 cup Whole milk
  • 2 large Eggs
  • 1 cup Chopped green onions
  • 1 medium Jalapeño pepper, finely chopped
  • 1 medium Red onion, finely chopped
  • 1 cup Mild cheddar cheese, shredded
  • 2 cups Vegetable oil (for frying)
  • Salt, to taste


Instructions

  1. Prepare the dipping sauce: In a small bowl, combine the mayonnaise with the finely chopped Roma tomatoes. Mix well and set aside to let the flavors meld.
  2. Combine dry ingredients: In a large mixing bowl, add the diced Roma tomatoes, all-purpose flour, baking powder, kosher salt, black pepper, and minced garlic. Stir to evenly distribute all dry components.
  3. Add wet ingredients and vegetables: Pour in the whole milk and crack in the eggs. Gently fold in the chopped green onions, jalapeño pepper, red onion, and shredded cheddar cheese, ensuring all ingredients are well incorporated to form a thick batter.
