Instructions

  1. Prepare water bath: Fill a medium saucepan with about 2 inches of water and bring it to a gentle simmer over medium heat. Make sure the water is simmering gently without boiling vigorously.
  2. Combine ingredients and heat: In a heatproof bowl, combine the egg whites, granulated sugar, cream of tartar, and a pinch of salt. Place the bowl over the simmering water, ensuring the bottom of the bowl does not touch the water. Stir constantly with a whisk for 4 to 5 minutes until the sugar dissolves completely and the mixture reaches an internal temperature of 160°F (71°C).
  3. Whip the mixture: Carefully remove the bowl from the heat and transfer the warm egg white mixture to a stand mixer or a large bowl suitable for a hand mixer. Beat on high speed for 6 to 8 minutes until glossy, stiff peaks form.
  4. Add flavorings: Once stiff peaks are achieved, add the vanilla extract and any optional flavorings such as almond extract or lemon juice. Beat for another 30 seconds to incorporate.
  5. Use or store the frosting: Immediately pipe or spread the marshmallow frosting on your cupcakes or cakes. If you have extra, store it covered in the refrigerator for up to 2 hours and re-whip briefly before using if needed.
