Instructions
- Prepare water bath: Fill a medium saucepan with about 2 inches of water and bring it to a gentle simmer over medium heat. Make sure the water is simmering gently without boiling vigorously.
- Combine ingredients and heat: In a heatproof bowl, combine the egg whites, granulated sugar, cream of tartar, and a pinch of salt. Place the bowl over the simmering water, ensuring the bottom of the bowl does not touch the water. Stir constantly with a whisk for 4 to 5 minutes until the sugar dissolves completely and the mixture reaches an internal temperature of 160°F (71°C).
- Whip the mixture: Carefully remove the bowl from the heat and transfer the warm egg white mixture to a stand mixer or a large bowl suitable for a hand mixer. Beat on high speed for 6 to 8 minutes until glossy, stiff peaks form.
- Add flavorings: Once stiff peaks are achieved, add the vanilla extract and any optional flavorings such as almond extract or lemon juice. Beat for another 30 seconds to incorporate.
- Use or store the frosting: Immediately pipe or spread the marshmallow frosting on your cupcakes or cakes. If you have extra, store it covered in the refrigerator for up to 2 hours and re-whip briefly before using if needed.
