Herb Spread

  • 4 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Prepare the Herb Spread: In a small bowl, combine the softened cream cheese, mayonnaise, chopped dill, chopped chives, and lemon juice. Mix thoroughly until smooth and well blended. Season with salt and pepper according to taste.
  2. Slice the Cucumber: Using a sharp knife or mandoline, slice the cucumber into very thin rounds. Pat dry with paper towels to remove excess moisture, which helps prevent sogginess in your sandwiches.
  3. Assemble the Sandwiches: Lay out the bread slices on a clean surface. Spread a generous layer of the herb cream cheese mixture evenly over each slice. Arrange cucumber slices in a single layer over half of the bread slices.
  4. Close and Trim: Top the cucumber-covered bread slices with the remaining bread slices, herb spread side down, to form sandwiches. Press gently to adhere. Using a sharp knife, cut each sandwich into 3 or 4 small triangles or rectangles, depending on desired size.
  5. Chill and Serve: Place the sandwiches on a serving platter, cover with plastic wrap, and refrigerate for at least 30 minutes to allow flavors to meld and bread to firm up. Serve chilled or at room temperature.
