Herb Spread
- 4 oz cream cheese, softened
- 2 tbsp mayonnaise
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare the Herb Spread: In a small bowl, combine the softened cream cheese, mayonnaise, chopped dill, chopped chives, and lemon juice. Mix thoroughly until smooth and well blended. Season with salt and pepper according to taste.
- Slice the Cucumber: Using a sharp knife or mandoline, slice the cucumber into very thin rounds. Pat dry with paper towels to remove excess moisture, which helps prevent sogginess in your sandwiches.
- Assemble the Sandwiches: Lay out the bread slices on a clean surface. Spread a generous layer of the herb cream cheese mixture evenly over each slice. Arrange cucumber slices in a single layer over half of the bread slices.
- Close and Trim: Top the cucumber-covered bread slices with the remaining bread slices, herb spread side down, to form sandwiches. Press gently to adhere. Using a sharp knife, cut each sandwich into 3 or 4 small triangles or rectangles, depending on desired size.
- Chill and Serve: Place the sandwiches on a serving platter, cover with plastic wrap, and refrigerate for at least 30 minutes to allow flavors to meld and bread to firm up. Serve chilled or at room temperature.
