Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef or shaved steak
- 1 onion, diced
- 1 bell pepper, diced
- 4 cups diced potatoes (peeled if desired)
Dairy and Soup
- 2 cups shredded cheddar cheese
- 1 can condensed cream of mushroom soup
- 1/2 cup milk
Seasonings
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Garnish
- Fresh parsley for garnish
Instructions
- Brown the Beef: In a skillet over medium heat, brown the ground beef or shaved steak until it’s no longer pink. Drain off any excess grease to keep the casserole from being too oily.
- Sauté Vegetables: Add the diced onion and bell pepper to the skillet with the beef and sauté for 2-3 minutes until the vegetables are slightly softened and fragrant.
- Prepare Sauce: In a separate bowl, combine the condensed cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Stir until the mixture is smooth and well blended.
- Layer in Crockpot: In the crockpot, start by layering half of the diced potatoes evenly at the bottom. Then add half of the cooked beef and vegetable mixture, followed by half of the shredded cheddar cheese. Pour half of the prepared soup mixture evenly over this layer.
- Repeat Layering: Repeat the layering process with the remaining diced potatoes, beef mixture, cheddar cheese, and soup mixture to build the casserole.
- Cook: Cover the crockpot with its lid and cook on low heat for 5-6 hours. Cook until the potatoes are tender and the casserole is heated through and bubbly.
- Garnish and Serve: Once cooked, garnish the casserole with fresh parsley before serving to add a fresh, vibrant touch.
Notes
- For a thicker casserole, use less milk or add extra cheese.
- Shaved steak can be substituted with extra ground beef for ease.
- Make sure the potatoes are diced uniformly for even cooking.
- This casserole can be prepared the night before and refrigerated before cooking in the crockpot.
- Feel free to add other vegetables like mushrooms or jalapeños for extra flavor.
