Description

This Crock Pot Cheesesteak Tortellini is a comforting and hearty slow cooker meal combining tender shaved beef, sautéed vegetables, creamy cheeses, and cheesy tortellini. It’s an effortless one-pot dish perfect for busy days, delivering rich flavors and a satisfying creamy texture.

Ingredients

Scale

Meat and Vegetables

  • 1 ½ pounds shaved beef steak (or ribeye, sirloin, or ground beef)
  • 1 large onion, sliced
  • 2 bell peppers, sliced (green or mixed colors)
  • 8 ounces mushrooms, sliced (optional)

Liquids and Seasonings

  • 3 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt (to taste)
  • ½ teaspoon black pepper

Dairy & Pasta

  • 8 ounces cream cheese, softened
  • 2 cups shredded mozzarella cheese (or provolone)
  • 20 ounces cheese tortellini (fresh or frozen)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Brown the beef (optional): Heat a skillet over medium-high heat and sear the shaved beef or ground beef until it is lightly browned. This step enhances flavor but can be skipped for convenience. Drain any excess fat before using.
  2. Layer ingredients in Crock Pot: Place the browned beef into the slow cooker along with sliced onions, bell peppers, mushrooms (if using), beef broth, garlic powder, Italian seasoning, salt, and black pepper. Stir gently to combine all ingredients evenly.
  3. Cook: Cover and set the slow cooker to low for 6–7 hours or high for 3–4 hours. Cook until the beef and vegetables are tender and flavors meld together.
  4. Make the sauce creamy: Stir in the softened cream cheese until fully melted and creamy. Add the shredded mozzarella or provolone cheese and mix well until the sauce becomes smooth and cheesy.
  5. Add tortellini: Gently stir in the cheese tortellini during the last 20 to 30 minutes of cooking to allow the pasta to cook through without becoming mushy.
  6. Finish and serve: If desired, top with extra shredded cheese and garnish with fresh parsley before serving hot.

Notes

  • For best flavor, brown the beef before adding to the Crock Pot, but this step can be skipped to save time.
  • Adjust salt to taste depending on the saltiness of your broth or cheese.
  • If using frozen tortellini, make sure to add it during the last 20-30 minutes to avoid overcooking.
  • Mushrooms are optional and can be omitted if preferred.
  • Fresh parsley garnish adds a nice color contrast and fresh flavor but is optional.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
