Ingredients
Scale
Pasta
- 14 oz linguine
- Salt, to season pasta water
Bacon & Sauce
- 7 oz diced bacon
- 2 tbsp olive oil
- 3 cloves garlic, finely chopped
- 1/2 tsp freshly ground black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup reserved pasta cooking water
Finishing Touches
- 1.4 oz grated Parmesan cheese (plus extra for serving)
- 2 tbsp chopped fresh parsley
- Zest of 1/2 lemon (optional)
Instructions
- Cook Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook until al dente according to package directions, usually about 9 to 11 minutes. Reserve 1/2 cup of the pasta cooking water, then drain the pasta well.
- Fry Bacon: While pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced bacon and cook, stirring occasionally, until crispy and golden, about 6 to 8 minutes.
- Sauté Garlic and Spices: Reduce heat to low. Stir in the finely chopped garlic, freshly ground black pepper, and red pepper flakes if using. Sauté gently for about 1 minute until fragrant, being careful not to burn the garlic.
- Combine Pasta and Sauce: Add the drained linguine to the skillet with the bacon. Pour in 1/4 cup of the reserved pasta water and toss thoroughly to coat the pasta. Add more pasta water as needed to achieve a glossy, creamy sauce that clings to the noodles.
- Add Cheese and Finish: Remove the skillet from heat. Stir in the grated Parmesan cheese until it melts completely into the sauce, creating a silky texture. Mix in the chopped fresh parsley and lemon zest if desired for brightness.
- Serve: Plate the linguine immediately, topping with extra grated Parmesan and a sprinkle of freshly cracked black pepper. Enjoy while warm.
Notes
- Be careful not to burn the garlic when sautéing; cook on low heat and watch closely.
- Use reserved pasta water to adjust sauce consistency; the starch helps create a creamy texture without cream.
- Red pepper flakes are optional; omit if you prefer a milder dish.
- Freshly grated Parmesan yields better flavor and melts more smoothly than pre-grated cheese.
- If you want a stronger lemon flavor, add a little fresh lemon juice along with the zest.
