Description

This creamy chicken pasta salad is a delightful blend of tender cooked chicken, al dente pasta, and vibrant fresh vegetables, all coated in a tangy and rich dressing made from mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Perfect as a refreshing side dish or a light main course for summer gatherings, picnics, or casual lunches.

Ingredients

Scale

Pasta and Protein

  • 2 cups rotini or penne pasta
  • 1 pound cooked chicken breast, diced

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup green onions, chopped

Dressing

  • 1 cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or penne pasta and cook according to package instructions until al dente, usually about 8 to 10 minutes. Drain and rinse under cold water to stop cooking and cool the pasta.
  2. Prepare the Vegetables and Chicken: While the pasta cooks, dice the cooked chicken breast into bite-sized pieces. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and chop the green onions. Place all the vegetables and chicken in a large mixing bowl.
  3. Make the Dressing: In a separate small bowl, whisk together the mayonnaise, plain Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth and well combined. Taste and adjust seasoning as needed.
  4. Combine Salad: Add the cooled pasta to the bowl with the chicken and vegetables. Pour the dressing over the mixture and gently toss until everything is evenly coated with the creamy dressing.
  5. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, garnish with fresh parsley if desired. Serve chilled for the best taste.

Notes

  • Use rotini or penne pasta as they hold the dressing well, but you can substitute with other short pasta shapes like shells or bowties.
  • For extra flavor, add finely chopped fresh herbs such as dill or basil to the dressing.
  • To lighten the recipe, substitute half the mayonnaise with additional Greek yogurt.
  • Make sure to cool the pasta completely to prevent the salad from becoming soggy.
  • This salad keeps well in the refrigerator for up to 3 days, making it perfect for meal prep.
