Scale
Cake Batter
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
Streusel Topping
- 1/2 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish to prevent sticking.
- Prepare the Streusel Topping: In a medium bowl, mix together the brown sugar, flour, and cinnamon until well combined.
- Cut in the Butter: Add the cold cubed butter to the streusel mixture and use a pastry cutter or your fingers to cut it in until the mixture resembles coarse crumbs. Set aside.
- Mix Dry Ingredients for Cake: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- Add Wet Ingredients: Add the softened butter, sour cream, eggs, and vanilla extract to the dry ingredients. Using an electric mixer on medium speed, beat until the batter is smooth and well combined.
- First Layer of Batter: Spread half of the cake batter evenly into the prepared baking dish.
- Add Streusel Layer: Sprinkle half of the prepared streusel topping evenly over the batter layer.
- Second Batter Layer: Spread the remaining half of the cake batter carefully over the streusel layer.
- Top with Remaining Streusel: Sprinkle the remaining streusel topping over the top layer of batter.
- Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the coffee cake to cool in the baking dish before slicing into squares and serving.
Notes
- Use room temperature ingredients for best batter consistency.
- Ensure the cold butter for the streusel is cubed and cold to create a crumbly topping.
- Check doneness with a toothpick to avoid overbaking and drying out the cake.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- This cake can be warmed slightly before serving for a fresh-baked feel.
