Description

A delicious and easy berry croissant bake featuring flaky croissants soaked in a creamy custard with fresh strawberries, blueberries, and raspberries. Perfect for a cozy breakfast or brunch, this baked dish combines the buttery texture of croissants with a sweet and tangy berry topping, all enriched with cream cheese and vanilla.

Ingredients

Scale

Croissants and Berries

  • 4 large croissants, broken into small pieces (use already baked croissants, not raw dough)
  • 1 cup sliced strawberries
  • ½ cup blueberries
  • ½ cup raspberries

Custard Mixture

  • 1 block (8 ounces) cream cheese, softened
  • 2/3 cup granulated sugar
  • 3/4 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat and prepare dish: Preheat the oven to 350°F (175°C). Spray a 9 x 9-inch baking dish with cooking spray to prevent sticking.
  2. Arrange croissants and berries: Spread the broken croissant pieces evenly in the prepared baking dish. Distribute the sliced strawberries, blueberries, and raspberries evenly over the croissant pieces.
  3. Make custard mixture: Using an electric mixer, beat the softened cream cheese until fluffy. Gradually add the granulated sugar, milk, eggs, and vanilla extract, mixing until smooth and well combined.
  4. Combine and refrigerate: Pour the cream cheese custard mixture evenly over the croissants and berries. Cover the baking dish and place it in the refrigerator for at least 15 minutes, or up to 14 hours, allowing the croissants to soak up the custard.
  5. Bake the casserole: Remove the cover and bake the dish in the preheated oven for 35 to 40 minutes, or until the top is golden brown and the custard is set.
  6. Serve: Let the berry croissant bake cool slightly. Serve warm, optionally dusted with powdered sugar or drizzled with syrup for extra sweetness. Enjoy your flavorful brunch!

Notes

  • Use day-old or stale croissants for best soaking results; fresh croissants may become too soggy.
  • You can substitute or add other fresh berries like blackberries or cherries according to preference.
  • Covering and chilling the dish overnight enhances the custard soaking and flavors.
  • Leftovers can be refrigerated and reheated gently in the oven to retain crispness.
  • For a dairy-free or vegan version, use appropriate substitutes like vegan cream cheese and plant-based milk.
