Ingredients
Scale
Meatloaf Mixture
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup grated Swiss cheese
- 4 slices of bacon, cooked crisp and crumbled
- 1 cup chopped mushrooms
- 1/2 cup chopped onions
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
Topping
- 1/2 cup ketchup (for topping)
Instructions
- Prepare Ingredients: Cook the bacon in a pan until crispy, then crumble it. In the same pan, sauté the mushrooms and onions until they are soft and translucent. Allow them to cool before using.
- Mix Meatloaf: In a large bowl, combine ground beef, ground pork, Swiss cheese, breadcrumbs, milk, crumbled bacon, Parmesan cheese, sautéed mushrooms, and onions. Crack in the eggs and add Worcestershire sauce, ketchup, garlic powder, salt, thyme, and black pepper. Stir gently until the mixture just holds together; avoid overmixing to keep the meatloaf tender.
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the meatloaf.
- Shape and Bake: Form the meat mixture into a log shape and place it in a baking dish or on a parchment-lined baking sheet. Spread the remaining 1/2 cup of ketchup evenly over the top of the meatloaf.
- Bake: Bake the meatloaf for 60 to 70 minutes, or until the internal temperature reaches 160°F (71°C) to ensure it is cooked through.
- Rest and Serve: Allow the meatloaf to rest for about 10 minutes after baking to firm up. This resting time helps the meatloaf slice neatly without falling apart. Serve warm.
Notes
- Do not overmix the meat mixture to ensure a tender meatloaf.
- Use a meat thermometer to check doneness and avoid overcooking.
- Letting the meatloaf rest before slicing helps maintain its shape.
- You can prepare the meatloaf a day in advance and refrigerate before baking for convenience.
- Leftover meatloaf makes great sandwiches the next day.
